Recipe: Avocado Hummus

Like every one else it seems, I love avocado. So when I stumbled upon this Avocado Hummus recipe from To Simply Inspire, I knew I wanted to make something similar. This hummus was amazing – it was lemony, it was garlicky, and it was maybe the creamiest I have ever had. We served this during the New Years Eve dinner and my friends loved it.  The only change I would make going forward is add some sliced jalapeño to add some heat to it.

INGREDIENTS:

Avocado Hummus

  • 2 Avocados
  • 15 oz of Chick peas
  • 2- 3 cloves garlic
  • zest of one lemon
  • zest of one lime
  • 3 TBSP of lime juice
  • 3 TBSP of lemon juice
  • 2 TBSP Olive oil
  • ½ tsp Salt
  • ¼ tsp of pepper
DIRECTIONS
  1. Place avocado, chick peas, garlic, lemon zest, lime zest, lemon juice, lime juice, salt and pepper in a food processor and blend until smooth.
  2. Drizzle in olive oil as the hummus is mixing.
  3. Taste and adjust seasonings as needed, adding more salt, lemon juice or olive oil if needed. If it’s too thick, add a bit of water.
  4. Serve with your favorite crackers, warm pita bread or veggies.

This is recipe is gluten free and vegan.
