Like every one else it seems, I love avocado. So when I stumbled upon this Avocado Hummus recipe from To Simply Inspire, I knew I wanted to make something similar. This hummus was amazing – it was lemony, it was garlicky, and it was maybe the creamiest I have ever had. We served this during the New Years Eve dinner and my friends loved it. The only change I would make going forward is add some sliced jalapeño to add some heat to it.
INGREDIENTS:
- 2 Avocados
- 15 oz of Chick peas
- 2- 3 cloves garlic
- zest of one lemon
- zest of one lime
- 3 TBSP of lime juice
- 3 TBSP of lemon juice
- 2 TBSP Olive oil
- ½ tsp Salt
- ¼ tsp of pepper
DIRECTIONS
- Place avocado, chick peas, garlic, lemon zest, lime zest, lemon juice, lime juice, salt and pepper in a food processor and blend until smooth.
- Drizzle in olive oil as the hummus is mixing.
- Taste and adjust seasonings as needed, adding more salt, lemon juice or olive oil if needed. If it’s too thick, add a bit of water.
- Serve with your favorite crackers, warm pita bread or veggies.
This is recipe is gluten free and vegan.
