If someone mentions to me that they know of a good egg dish – you can bet that I’ll be heading there soon. Pictures of the egg skillets at Chuck’s Trading Post in Hampden have been popping up on my Instagram feed for a few months now and I knew I had to give them a try.
On a recent Saturday morning I needed to run to a store in Hampden so I decided it was the perfect time to taste these egg skillets for myself.

I started the morning with a cup of iced coffee. This was nothing outstanding, but it gave me the much needed boost of caffeine that I needed to get my day started.

The menu at Chuck’s has eight skillets or you can build your own. Usually I like to go with the build your own option, but the Rancheros really caught my eye. The skillet is hash, black beans, salsa, avocado, sour cream, a quesadilla, and lime then topped with two sunny side-up eggs. Let me start by saying that this skillet is massive; I definitely did not finish it. But I really loved the quesadilla to dip in the runny egg yolk and the dish combined all of my favorite southwestern and Mexican flavors. I will be ordering this again.
