After a day of eating and drinking in D.C., I was in the mood for something quick and healthy for dinner. I remembered that Jose Andres had opened a few fast casual vegetarian spots, called Beefsteak. Fortunately, there was a location less than than a five minute walk from where we were so obviously we headed over for something healthy and satisfying.

This is a fast casual joint with your typical set up, build a bowl as you go through the line. I usually build my own meal, but the Lime After Lime looked so good, I opted to order it right off of the menu. Cilantro lime quinoa was topped with romaine, spinach, radiccio, arugula, roasted edamame & corn, cherry tomato, scallions, and za’atar sunflower seeds, and then tossed in a Chili Lime Vinaigrette. This bowl was so good. It was packed with lime-y flavor and really hit that healthy spot I needed. I can’t wait to try some of the other veggie bowls on the menu.

To wash down the veggie bowl, I tried one of the house made juices, the Cucumber Apple Kale. It was super refreshing with my meal.
