Recipe: Spicy Peach Margarita

Summertime is my favorite season for produce. Farmers market mornings always lead to me buying peaches by the bushel (and plums, tomatoes, and anything else that catches my eye). Ultimately I end up snacking on most of the produce or using it as a part of my meals for the week. But it is the summer and there’s nothing more relaxing than hanging outside with a cold drink.

When I’m hanging poolside, it’s important that I have a drink that’s delicious, refreshing, and most importantly – easy to make. Having a cocktail recipe that can be prepared ahead of time and served in under five minutes is key.

Spicy Peach Margarita

Obviously I wanted the recipe to utilize the season’s bounty (in this case peaches and jalapeños) as well as the all new Domino® Golden Sugar which is less processed than its white counterpart.

Because midsummer peaches are so sweet and juicy, there’s nothing like a little bit of heat to compliment that. Enter, jalapeño simple syrup. The spiciness of the jalapeños add that extra something to really elevate your poolside cocktail.

A margarita is a great way to showcase all of the sweet, spicy, and salty flavors that I love. And this recipe is so adaptable, when peaches aren’t at their peak juiciness, they can be swapped for watermelon, pineapple, berries, or citrus. And if tequila isn’t your spirit of choice, it can be easily swapped for vodka or gin.

Spicy Peach Margarita

Not your average margarita – this one uses in season produce and a bit of heat to amp up the flavor

Ingredients

Jalapeno Simple Syrup

  • 1 cup Domino Golden Sugar
  • 1 cup Water
  • 2 Jalapeños

Peach Margarita

  • 2 Peaches
  • 3 oz Tequila
  • 1 Lime Juice
  • 1/2 Orange Juice
  • 1 Jalapeño Garnish
  • Flaky Sea Salt Garnish

Instructions

Jalapeno Simple Syrup

  1. In a saucepan, add sugar and water – stir to combine

  2. Add jalapeños, sliced lengthwise

  3. Bring to a simmer over medium heat until all of the sugar is dissolved

  4. Remove from heat and cover, let steep for 10 minutes

  5. Strain and keep in an airtight container for up to two weeks

Peach Margarita

  1. Bring a large pot of water to a boil

  2. Score peaches on the bottom and place in boiling water for 30 seconds

  3. Remove peaches from water and put into an ice bath

  4. Peel the peaches and remove the flesh from the pit

  5. Blend peaches until smooth

  6. Pour 6 oz of peach puree, 3 oz of jalapeño simple syrup, and 3oz tequila into a cocktail shaker with ice

  7. Squeeze lime and orange juice into the cocktail shaker; shake to combine

  8. Rim glass with flaky sea salt and fill with ice

  9. Strain liquid from cocktail shaker and pour into your salt rimmed glass

  10. Garnish with lime and jalapeños

Recipe Notes

If you don’t have time to make your own peach juice, you can buy some at your local supermarket – just be mindful of how sweet the juice is when you’re mixing in the rest of the cocktail ingredients 

If the simple syrup is too spicy, you can swap for a more mild pepper – to make the simple syrup spicier, either steep for longer or mix in hotter peppers
