Recipe: Chocolate Soufflé

Let’s talk about date night for a second – for me, the best part is dessert. And when it’s super chocolatey and makes the kitchen smell all delicious – that’s just a downright treat. When I want something a little more fun than cookies, but less played out than a lava cake, I can always make a chocolate soufflé out of my pantry staples.

Now don’t let this French dessert scare you – the trick is to prep all of your ingredients first (weighing and measuring) and then move quickly once you start. I promise with prepping first, you’ll have a sky high soufflé.

Over the years, I’ve made a few different soufflé varieties – but my absolute favorite is always chocolate. When Domino® Sugar invited me to try their new Golden Sugar, I knew that the slight molasses tinge would do wonders for the overall flavor. And also, I love that the Golden Sugar is less processed than traditional white sugar.

Whatever we ultimately decide to eat for date night, a chocolate soufflé is always so delightful and elevates the meal into something truly special.

You might think that soufflés are reserved for a post-dinner treat at a steakhouse. But I promise, the first time you see your soufflé rising high in the oven, you will be keeping this recipe in your back pocket for all future date nights. (Or any dinner party where you want to impress your guests).

So what are you waiting for? Don’t let the chocolate soufflé intimate you any longer and really step up your next date night.

  • 1/3 cup Domino® Golden Sugar
  • 2 tbsp Domino® Golden Sugar
  • 5 oz Chocolate chopped finely
  • 3 Egg Yolks room temperature
  • 6 Egg Whites room temperature
  • 2 tbsp Butter room temperature
  • 1 pinch Salt
  • Powdered Sugar garnish

Instructions

  1. Preheat the oven to 375F

  2. Butter 3 individual soufflé ramekins and sprinkle with 2 tbsp of Domino® Golden Sugar, set aside

  3. In a metal bowl over simmering water, melt the finely chopped chocolate, stirring continuously

  4. Once the chocolate is melted, remove the bowl from heat and stir in the egg yolks

  5. In a separate bowl, beat the egg whites and salt with a hand or stand mixer on medium-high speed until they have soft peaks

  6. Increase the speed to high speed and gradually add the Domino® Golden Sugar, until the egg whites hold stiff peaks

  7. Slowly fold the chocolate mixture into the egg whites until the mixture is evenly combined without any streaks

  8. Spoon your soufflé batter into the ramekins and bake for 12-15 minutes until they rise

  9. Dust with powdered sugar and serve immediately

Recipe Notes

Measure all of your ingredients and butter the ramekins before you begin so you can assemble the soufflé as quickly as possible – doing so will help ensure your soufflé rises

The ramekins I use are 3.5 inches wide and 1 inch deep
