Seared Tuna over Avocado Wasabi Puree

Ingredients

Tuna

  • 2 Tuna Steaks Approx 8 oz. each
  • 1/2 Cup White Sesame Seeds
  • 1/2 Cup Black Sesame Seeds
  • 2 TBSP Vegetable Oil
  • Salt + Pepper to taste

Avocado Wassabi Puree (can be made up to 3 days in advance)

  • 1 Avocado
  • 4 Green Onions chopped
  • 1 Lime zested + juiced
  • 2 TBSP Wasabi adjust depending on your preferences
  • 1 TBSP Cilantro I always keep the stir-in paste in my fridge
  • 1 TBSP Ginger I always keep the stir-in paste in my fridge
  • 1/3 Cup Olive Oil
  • Salt + Pepper to taste

Instructions

  1. Begin by prepping your sauce. In a small blender, combine all of the sauce ingredients and blend until smooth. Reserve one green onion for garnish.

  2. Taste the avocado wasabi puree, adjust seasonings as needed and set aside. 

  3. Coat the tuna with salt and pepper on both sides.

  4. Mix the black and white sesame seeds on a plate and dredge the tuna through the seeds. Coating evenly. 

  5. Heat the oil into a pan over medium-high heat.

  6. When the oil is hot (just starting to smoke), arrange the tuna in the pan and cook for about a minute on each side. Flipping when the white sesame seeds begin to turn golden.

  7. Transfer the tuna to a cutting board and slice, about half an inch thick.

  8. Arrange the tuna over a swipe of the avocado wasabi puree.

  9. Garnish with 1 chopped scallion

Recipe Notes

  • If you prefer a more thoroughly cooked tuna, leave it in the pan for a minute or two longer on each side. Depending on your preferences. 
  • The avocado wasabi puree makes enough for 3-4 servings
