Shoyou Sushi in Federal Hill: Fresh Fish, Bold Flavors, and BYOB Vibes

If you’re searching for the best sushi in Baltimore, chances are someone will point you toward Shoyou Sushi — or as locals call it, Sushi Bruce. I’d been hearing about Chef Bruce’s insanely fresh fish and inventive rolls for ages, and since it’s within walking distance from my place in Federal Hill, I finally had to ask myself: why haven’t I been yet?

So, a friend and I finally went to see what all the hype was about — and spoiler alert: it totally lived up to it.
Pro tip before you go: Shoyou Sushi is cash only and BYOB, so plan accordingly!

We kicked things off with a Seaweed Salad, which was light, crisp, and refreshing — the perfect way to start the meal.

Next up was the Garlic Edamame, sautéed with soy sauce and (you guessed it) plenty of garlic. The sauce was so good I could have easily sipped it with a straw. I ended up keeping the empty dish and dipping my sushi in the leftover sauce — highly recommend doing the same!

The first roll we tried was the Spicy Tuna Tempura Roll — lightly battered spicy tuna served with a drizzle of eel sauce. While I wasn’t a huge fan of the extra tempura flakes on top, the warm, lightly fried center was a really nice touch that made it stand out.

The second roll, the Hawaiian Ahi Roll, ended up being my favorite. It featured spicy tuna topped with ahi tuna and seaweed salad — lighter, cleaner, and absolutely delicious. If you like a fresh, balanced roll, this one’s for you.

Everything we tried was fantastic, and I completely understand why Chef Bruce has such a loyal following. I can’t wait to go back and explore more of his creative sushi rolls (and, let’s be honest, order that garlic edamame again).
