Brunch at Milktooth Indianapolis

One of the best parts about traveling is discovering restaurants that are doing something completely different from the norm. Across the country, chefs are constantly pushing the boundaries of what a brunch menu can look like, and Milktooth in Indianapolis is a perfect example of that creativity.

Despite being relatively new when I visited, Milktooth had already received a ton of national attention, including a spot on Bon Appetit Hot 10. With accolades like that, it immediately went on my must-visit list while I was in Indianapolis.

The restaurant itself has a cool, eclectic feel. The space used to be a garage, and it’s been transformed into a bright and airy dining room that perfectly matches the creative energy of the kitchen.

Latte with House Hazelnut-Cashew Milk

I started the meal with my go-to coffee drink: a latte.

But this wasn’t just any latte — Milktooth makes their own hazelnut-cashew milk in-house. I’m usually someone who sticks with traditional dairy milk, but this sounded too interesting to pass up.

The result was fantastic. The nutty flavor added a subtle richness that paired beautifully with the espresso.

Sorghum Glazed Bacon

Taking a recommendation from one of my favorite food accounts on Instagram, @buzz_food, I ordered the Sorghum Glazed Bacon.

The bacon was thick cut and coated in a sticky sorghum glaze that leaned sweet and slightly smoky. While I typically prefer my bacon extra crispy, the flavor on this one more than made up for the softer texture.

Spanish Manchego & Grapefruit Dutch Baby Pancake

Following my server’s recommendation, I ordered the Spanish Manchego & Grapefruit Dutch Baby Pancake.

This dish was absolutely incredible and easily the highlight of the meal.

The dutch baby pancake arrived puffed and fluffy with slightly melted manchego cheese layered into the batter. It was then topped with shaved Brussels sprouts, shallots, hazelnuts, grapefruit, and a bright sherry vinaigrette.

At first glance, the combination might sound unusual, but every element worked together perfectly. The savory cheese, bitter sprouts, citrusy grapefruit, and crunchy hazelnuts created a dish that was both complex and completely satisfying.
