Gunther & Co. Baltimore: Elevated Dining in Canton/Brewers Hill

One of the most anticipated restaurant openings this year was Gunther & Co. in Canton/Brewers Hill. Construction felt like it took forever, but the wait was worth it. The space itself is stunning—whether you’re a foodie or not, it’s worth a visit just to admire the design. Between the living wall, the touch of industrial decor, and the open kitchen, there’s something captivating in every corner.

A good friend and I had both been eager to try Gunther & Co., so we made plans for dinner. Faced with multiple menus—the all-day menu and the dinner menu—it was a bit overwhelming, but we eventually decided to start with the Beef Tartare. Honestly, this might be the best tartare I’ve ever had. The addition of Thai chili added a subtle kick that complemented the creamy texture perfectly. This dish is a must-order for anyone visiting Gunther & Co.

We also tried the Fried Delicata Squash, which was another standout. It wasn’t greasy at all, and the crispness of the apples balanced beautifully with the sweetness of the coconut and the gentle heat from the jalapeno.

For the main courses, my friend ordered the Wood-Oven Roasted Chicken. The photo doesn’t do it justice—the skin was perfectly crispy, and the meat was tender and moist. This is how all roasted chicken should be cooked.

I went with the Tea Smoked Duck Breast and couldn’t have been happier. The meat was tender and flavorful, and the preparation set a new standard for all future duck dishes I may encounter. I’ve been raving about it ever since.

From start to finish, everything at Gunther & Co. was exceptional. Despite some rumors I’d heard, the service was attentive and seamless, rounding out a truly remarkable dining experience. I’m already looking forward to my next visit.
