Easy Salsa Roja for Chips and Game Day

After making a batch of salsa verde, I knew the next thing to tackle was salsa roja. It’s one of those classic salsas that works with almost everything—chips, tacos, grilled meats, or even spooned over eggs the next morning.

I wanted this version to have plenty of flavor without going overboard on the heat since the salsa verde I had made earlier already packed a bit of a kick.

The result was a bright, tomato-forward salsa that disappeared almost immediately once my friends got their hands on it. This one has definitely earned a permanent spot in my football Sunday snack rotation.

The perfect addition to your football sunday

Course Side Dish, Snack
Cuisine Mexican

Ingredients

  • 2 pounds Roma Tomatoes chopped
  • 1 Small White Onion chopped
  • 2 Jalapeños chopped
  • 2 Garlic Cloves chopped
  • 1/4 cup Cilantro chopped
  • Lime Juice from 1/2 a lime
  • 2 tbsp Olive Oil
  • 1/4 tsp Cumin
  • Salt to taste

Instructions

  1. Add tomatoes, onion, peppers, garlic, cilantro and lime juice to a food processor/blender. Process until fairly smooth.

  2. Heat a large pot to medium heat and add olive oil. Add the salsa and it will sear quickly.

  3. Add cumin and bit of salt.

  4. Bring to a quick boil and reduce heat to a simmer. Simmer for 15-20 minutes.

  5. Season with salt if needed and stir.

  6. Cool and refrigerate until ready to use.

Recipe Notes

  • This recipe requires a blender, I use a NutriBullet
  • You can add more lime, cilantro, or jalapeños to adjust to your personal preferences.

Notes

This recipe is very flexible. You can easily adjust the flavors depending on what you like:

  • Add more jalapeños if you want extra heat

  • Add more lime juice for brightness

  • Add extra cilantro for a fresher flavor

The salsa will also continue to develop flavor after it sits in the refrigerator for a few hours.

Serving Ideas

This salsa roja works well with:

  • tortilla chips

  • tacos

  • grilled chicken

  • scrambled eggs

  • burrito bowls

It’s also a great addition to a game day spread alongside guacamole, queso, and other dips.

Equipment

This recipe requires a blender or food processor. I use a NutriBullet, which makes quick work of the tomatoes and peppers.
