Peppermint Hot Chocolate Rice Krispy Treats for Holidays

As the temperature drops each year, my craving for hot chocolate seems to get stronger. It’s one of those winter comforts that everyone in my family looks forward to once the holidays roll around.

This year I wanted to turn that classic winter drink into something a little different. Since we also love Rice Krispy treats, combining the two felt like the perfect holiday experiment.

The result was peppermint hot chocolate Rice Krispy treats—a dessert that captures the cozy flavors of hot cocoa while still keeping that chewy, marshmallow-filled texture everyone loves in a classic Rice Krispy treat.

Sahadi’s, a specialty grocery store based in Brooklyn, sent me a few ingredients to experiment with while developing this recipe, and the combination ended up being perfect for holiday gatherings.

Peppermint Hot Chocolate Rice Krispy Treats

Peppermint Hot Chocolate Rice Krispy Treats

The perfect addition to your holiday gatherings

Course Dessert
Cuisine American

Ingredients

  • 6 cups Coca Krispies
  • 1/4 cup Butter
  • 10.5 oz Mini Marshmallows (and additional for mixing in) 1 Bag
  • 3 tbsp Cocoa Powder
  • 1 tsp Sugar
  • 1 tsp Peppermint Extract
  • 16 oz White Chocolate 1 bag
  • Parchment Paper

Instructions

  1. Line 9x9 square pan with parchment paper and spray with cooking spray and set aside.

  2. Melt butter in large saucepan over low heat.

  3. When butter is melted add one bag of mini marshmallows and then cocoa powder and sugar.

  4. Stir while continuing to cook over low heat until marshmallows are melted and chocolate is mixed in.

  5. Remove from heat.

  6. Add in your 6 cups Cocoa Krispies.

  7. Stir until mixed well.

  8. Now add in 1 cup of mini marshmallows and mix well.

  9. Stir until marshmallows are evenly distributed throughout the krispie mixture.

  10. Pour into prepared pan.

  11. Press the rice krispy mix into the pan.

  12. Let cool for at least 1 hour and cut into rectangles.

  13. Melt the white chocolate.

  14. Add the peppermint extract into the melted white chocolate and mix well.

  15. Dip each rectangle into the peppermint white chocolate.

  16. Set aside to solidify

Recipe Notes

Before the chocolate sets, you can add additional toppings such as more marshmallows, chocolate chips, crushed candy canes, and more.

A Cozy Holiday Dessert

Peppermint and chocolate are one of those combinations that immediately feels festive. Turning those flavors into a Rice Krispy treat gives you something nostalgic and fun while still capturing that classic hot chocolate vibe.

These have quickly become one of my favorite desserts to make during the holidays, and they disappear fast whenever I bring them to a gathering.
