As the temperature continues to drop, my hot chocolate craving just gets more and more intense. My whole family shares this hot chocolate craving with me so for the holidays this year I decided to combine our love for hot chocolate with a different love – the love for Rice Krispy treats. Sahadi’s, a specialty grocery destination in Brooklyn, sent me a few ingredients to experiment with for these hot chocolate Rice Krispy treats and I know these will become a holiday staple.

Peppermint Hot Chocolate Rice Krispy Treats
The perfect addition to your holiday gatherings
- 6 cups Coca Krispies
- 1/4 cup Butter
- 10.5 oz Mini Marshmallows (and additional for mixing in) 1 Bag
- 3 tbsp Cocoa Powder
- 1 tsp Sugar
- 1 tsp Peppermint Extract
- 16 oz White Chocolate 1 bag
- Parchment Paper
Line 9x9 square pan with parchment paper and spray with cooking spray and set aside.
Melt butter in large saucepan over low heat.
When butter is melted add one bag of mini marshmallows and then cocoa powder and sugar.
Stir while continuing to cook over low heat until marshmallows are melted and chocolate is mixed in.
Remove from heat.
Add in your 6 cups Cocoa Krispies.
Stir until mixed well.
Now add in 1 cup of mini marshmallows and mix well.
Stir until marshmallows are evenly distributed throughout the krispie mixture.
Pour into prepared pan.
Press the rice krispy mix into the pan.
Let cool for at least 1 hour and cut into rectangles.
Melt the white chocolate.
Add the peppermint extract into the melted white chocolate and mix well.
Dip each rectangle into the peppermint white chocolate.
Set aside to solidify
Before the chocolate sets, you can add additional toppings such as more marshmallows, chocolate chips, crushed candy canes, and more.
