Easy Pitaya Smoothie Bowl for a Healthy Breakfast

I’ve always been a big fan of pitaya, also known as dragon fruit. Not only is it incredibly vibrant in color, but it’s also packed with nutrients like vitamin C, calcium, phosphorus, fiber, and antioxidants.

For anyone looking to start the year with healthier habits, pitaya makes a great base for a quick and easy breakfast. Lately, smoothies and smoothie bowls have become some of my favorite go-to meals. They’re filling, refreshing, and require very little cleanup, which is always a win during busy mornings.

This pitaya smoothie bowl comes together in just a few minutes and can easily be customized with whatever fruit or toppings you have on hand.

Course Breakfast
Cuisine American
Servings 1 person

Ingredients

  • 1 Pitaya Plus Smoothie Pack
  • 1/2 Cup Coconut Water Add more or less depending on your desired consistency
  • 1/2 Cup Blueberries
  • 10 Strawberries
  • 1/3 Cup Sweet Home Farm Blueberry Granola
  • 1 TBSP Honey For additional sweetness, if needed

Instructions

  1. Add Pitaya Plus smoothie pack, 5 strawberries, most of the blueberries, and coconut water to the blender

  2. Blend until all chunks are gone. (If you'd like the smoothie bowl to be thinner, add additional coconut water)

  3. Pour into a bowl

  4. Top with Sweet Home Farm granola, strawberries, and reserved blueberries

  5. Drizzle with honey for additional sweetness if necessary

Recipe Notes

  • Customize this bowl by topping it with whatever fruit you'd like. Kiwi and bananas also work great with pitaya
  • If your local supermarket sells pitaya (or dragonfruit), you can replace the smoothie pack for 1/2 of a pitaya and a handful of ice cubes (about 6)
  • My blender of choice is the Nutribullet

Easy Ways to Customize Your Bowl

One of the best things about smoothie bowls is how easy they are to personalize. A few toppings that work especially well with pitaya include:

banana slices
kiwi
additional berries
chia seeds
shredded coconut

If your grocery store carries fresh dragon fruit, you can also substitute half of a fresh pitaya and about six ice cubes for the smoothie pack.

A Bright Start to the Day

Between the vibrant color and the refreshing flavor, pitaya smoothie bowls are one of the easiest ways to start the morning on a healthy note. They come together quickly, look beautiful in a bowl, and can be topped with whatever fruit you happen to have in your kitchen.
